For those of you with simple taste buds, cut up a couple avocados; 2, 3 or 4, depending on how many you’re feeding. Mash the avocados in a bowl with a fork or potato masher until they’re smooth and creamy, but leave some chunks. Add a couple shakes of salt and a few drops of lemon and lime juice. You can even add in some salsa.
For more flavor and texture to make your taste buds dance, add a handful of any (or all) of the following: fresh cilantro, minced red onion, thawed frozen corn, toasted pumpkin seeds, diced sun dried tomato, shredded aged cheese (like cotija), diced bacon, shredded lettuce (adds a good crunch), shredded kale, diced pickled jalapeño slices (available at most grocery stores), diced fresh tomato, pressed raw or roasted garlic, smoked paprika.
