As the official start of summer approaches, so too do the endless parties with family and friends to celebrate the season. This French Onion Soup recipe, from our very own 1st Advantage Mortgage underwriter, is perfect for a family get-together as it makes five gallons of soup. Just make sure you have a giant pot to cook it in.
To begin, get 2 pounds of sliced Portabella and button mushrooms. Sauté and blend with 2 quarts of chicken stock to make the soup base. Add 4 gallons of beef stock.
Take 10-12 pounds of thinly sliced Vidalia onions and cook on low heat for one to one and a half hours until they’re nicely caramelized. Use half a bottle of red wine to deglaze the pan the onions were caramelized in.
Add a fist full of tied, fresh thyme sprigs to be simmered in the stock. Remove this before serving. Add a couple shakes of salt and pepper and you’re ready to serve.
This French Onion Soup is best enjoyed with chewy baguettes and a blend of shredded smoked Gruyere, Swiss, Mozzarella and Parmesan cheeses. Enjoy and let us know what else you’d like to try.
