Step 1: Pre-heat oven to 450 degrees and place a cast iron pan inside to warm up.
Step 2: Grab a bowl and stir together 1 ½ cups of warm water, ¾ tablespoons of dry yeast, and 1 teaspoon of sugar. Let the mixture rest until the yeast blooms. This usually takes 3 to 4 minutes.
Step 3: Place 3 cups of flour and 1 teaspoon of salt into a new, larger mixing bowl. For extra flavor, add a couple teaspoons of Italian seasoning, garlic power, minced onion flakes, red pepper flakes (only one teaspoon), fennel, basil leaves, and oregano. Add the yeast mixture along with 3 tablespoons of olive oil. Stir it all together to form a sticky dough. Knead the dough and slowly add 1 cup of flour, a little at a time, until the dough becomes a smooth, elastic ball. This usually takes about 5 to 8 minutes.
Step 4: Place the dough into a lightly oiled bowl and cover with a dry towel or plastic wrap. Let it rise for 30 minutes in a draft free spot before stretching or rolling into the desired shape.
Step 5: After the dough has risen, stretch it into your pre-warmed cast iron pan. Be careful because the pan will be hot. Pile on your favorite pizza sauce, cheese and toppings, and cook for 20 minutes. Once the buzzer goes off, wait 10 minutes before cutting and eating the pizza.
