This addicting Mexican-inspired dish has been called many different names such as Texas Caviar, Cowboy Caviar, Black Bean Corn Salsa; but regardless of the name this recipe is simply delicious. It is the perfect dish to bring to summer potlucks and if you haven’t tried it yet, you are going to love it. It’s such a versatile dish that can be eaten alone with tortilla chips or also can be part of an entrée like fish tacos. Either way you serve it up, it’s guaranteed to please.
- 1 can corn, drained and rinsed
- 1 can black beans, drained and rinsed
- 3 tomatoes, diced
- 2 avocados diced
- 1 cup chopped white onion
- ¾ cup chopped green onion
- 3/4 cup apple cider vinegar
- 3/4 cup olive oil
- Juice of 1 lime
- 1 cup sugar
Step 1: Drain and rinse the corn and black beans. Add to a large bowl.
Step 2: Chop the tomatoes, avocadoes, and onions. Add to the black bean and corn mixture.
Step 3: In a small bowl, mix together the vinegar, olive oil, lime juice, and sugar.
Step 4: Toss the liquid mixture in with the veggies.
Step 5: Cover and refrigerate at least one hour or overnight.
