This dish couldn’t be any more versatile – you can dress this recipe up or down to fit any occasion and can easily be served with a dipping sauce of your choice. Ketchup, barbecue sauce, mustard or our chipotle dipping sauce will all do the trick.
Ground chicken is delicious but it can get dry, especially when cooking it on the stove top. This is why this recipe adds grated zucchini. You’ll not only succeed in sneaking veggies into this delicious snack, but they’ll help add moisture to the finished product.
- 1 pound ground chicken breast
- 1 cup grated zucchini (leave peel on)
- 3 green onions sliced
- 2 garlic cloves, minced
- 1 teaspoon sea salt
- 1 ½ tablespoon olive oil, for cooking
Step 1: Combine all of the above ingredients, except olive oil, into a bowl and mix well.
Step 2: Take a small amount, roll and flatten lightly into 1 inch popper/patties.
Step 3: Heat a drizzle of olive oil in a medium pan over medium heat.
Step 4: Add poppers and cook 8-10 pieces at a time for about 5-6 minutes on one side.
Step 5: Flip over and cook an additional 4-5 minutes on the other side, or until golden brown. The centers should be fully cooked.
This is best enjoyed when topped with salsa, tomatoes, guacamole, scallions, or lime juice. Hope you enjoy and let us know what else you would like to try.
