Since everyone loves a good burger, take a break from the red meat and try these salmon burgers. You’ll reap all the health benefits without the guilt.

Ingredients

  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 3/4 cup panko bread crumbs
  • 2 cloves garlic, minced
  • 2 pounds salmon filets, skinned and finely chopped
  • 1 large egg, lightly beaten
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • Cooking spray
  • 8 toasted sandwich buns
  • Lettuce leaves
  • Tomato slices

Sesame mayonnaise

  • 1 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil

Step 1: In a small bowl, combine all ingredients for the sesame mayonnaise. Cover and keep chilled.

Step 2: In a medium bowl, combine peppers, panko bread crumbs, garlic and salmon.

Step 3: In another small bowl, combine egg, soy sauce, lemon juice and salt; add to salmon mixture, tossing gently to combine. Form into 8 patties.

Step 4: Lightly coat a grill pan or skillet with cooking spray. Heat over medium-high heat until hot. Grill or cook the patties, 5 minutes per side, or until desired degree of doneness. Spread the sesame mayonnaise evenly over toasted buns. Top each with a lettuce leaf, tomato slice and salmon patty. Cover with tops of buns and enjoy.
