If you’re searching for delicious way to gain energy, try these no-bake oatmeal energy bites of yumminess! These treats are not only chock full of protein, fiber and omega-3s, but they are incredibly simple to make. They taste similar to a no-bake cookie and your kids, coworkers, gym buddies and friends will love them (if you choose to share). Feel free to substitute all organic ingredients and use any non-nut butter alternative in place of peanut butter if your family suffers from nut allergies. You can also add in raisins, dried cranberries or pumpkin seeds to add your own touch!
Makes: 20-25 pieces
- 1 cup old fashioned oats
- 2/3 cup coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup chocolate chips
- 1/3 cup raw honey
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
Step 1: Combine all ingredients well with your hands in a large glass bowl. Cover bowl with lid or plastic wrap and chill in refrigerator for at least 30 minutes.
Step 2: Once chilled, roll into small balls (size is up to your preference).
Step 3: Store in an airtight container or plastic bag in the refrigerator or freezer.
