#1AMcooks – Patriotic Parfait
Need a last-minute treat for your 4th of July gathering? This decadent yet simple patriotic parfait is a total crowd-pleaser. Outshine the fireworks this year by treating your guests with this delectable dessert!
Servings: 4
Ingredients:
- 1/4 cup sugar
- 1/4 cup water
- 1 cup blueberries, extra for topping
- 1 tablespoon fresh lemon juice
- 1 cup heavy cream
- 10 ounces Granola
- 2 cups strawberries, chopped, extra for topping
- 1/2 cup shredded coconut (optional)
- 4 canning jars, 1/2 pint
Step 1: In a 1-quart saucepan, stir together sugar and water. Heat on high until it reaches a boil, stirring occasionally. Once boiling, stir in blueberries and lemon juice. Remove from heat. Let cool completely.
Step 2: In a large bowl, with mixer on medium speed, whip cream until soft peaks form. Gently fold in cooled blueberry mixture from step 1.
Step 3: Sprinkle a thin layer of granola on the bottom of 1 canning jar. Top with 2 tablespoons of strawberries, then 2 tablespoons of blueberry whipped cream. Repeat layering of granola, strawberries, and blueberry whipped cream. Repeat with remaining 3 jars. Serve immediately, or replace screw caps and refrigerate up to 1 day. Before serving, top each parfait with fresh blueberries and strawberries and 1 tablespoon of shredded coconut, if desired.
