If you’re looking for some healthier grilling options this summer, you’re going to love this recipe for sunny side up avocados! This recipe is double-packed with protein and healthy unsaturated fats, which assist with healthy skin and hair. If you’re not a fan of soupy, sunny side up eggs — have no fear — just leave yours on the grill a little bit longer until the eggs are cooked just the way you like them!
- 2 avocados
- 4 eggs
- Salt and pepper
- Fresh parsley, optional
- Heavy duty aluminum foil
- Butter knife
Step 1: Slice and de-pit each avocado. Create a bowl for each avocado half by folding a sheet of heavy duty aluminum foil and curling the edges up to loosely shape around the avocado. Sprinkle some salt and pepper into each half.
Step 2: Crack one egg into each avocado half, season with a little more salt and pepper and set on your girl. Cover your grill for about 15 minutes, or until the eggs are cooked to your liking. If desired, sprinkle fresh parsley on top of each avocado half and serve immediately.
