Yield: 9 cakes
- 1 pound skinless salmon fillet
- 5 cups cornflakes
- 4 tablespoons cilantro, chopped
- 1 orange
Step 1: In a food processor, pulse salmon, cornflakes, orange peel, 2 tablespoons cilantro, 1/2 teaspoon salt and 1/4 teaspoon pepper until finely chopped. Form into 9 patties and cook in a non-stick skillet on medium heat for 9 to 11 minutes, or until golden brown, turning once.
Step 2: Combine diced orange, remaining 2 tablespoons cilantro and 1/4 teaspoon each of salt and pepper. Serve with cakes.
