Spice things up at your next meal with this delicious roasted jerk chicken recipe. Packed with plenty of flavor and 60 grams of protein per serving, this chicken dish just might be your new favorite!
- 4 green onions, sliced
- 3 cloves garlic
- 2 jalapeno peppers, sliced
- 1/4 cup canola oil
- 3 tablespoons fresh lime juice
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon ground allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 whole chickens (about 4 pounds each)
Step 1: Preheat oven to 425 degrees F. Line a large rimmed baking sheet with foil.
Step 2: In a blender or food processor, blend green onions, jalapenos, oil, lime juice, soy sauce, brown sugar, allspice, salt and pepper until smooth.
Step 3: Arrange chickens on the foil-lined baking sheet. Using your hands, gently loosen the chicken skin from the meat. Spoon some green onion mixture into the cavity of the chicken as well as under the skin. Rub remaining mixture all over the outside of each chicken. Tuck the wings behind the breast and tie the drumsticks together with butcher’s twine. Roast in the oven for 1 hour.
Step 4: Reduce oven temperatures to 375 degrees F. Roast another 15 minutes or until the chicken is fully cooked (internal temperature reaches 165 degrees F).
