- 1 rotisserie chicken
- 6 sandwich rolls, split and lightly toasted
- 1 cup mayonnaise
- 1 cucumber, thinly sliced
- 3/4 cup shredded carrots
- 1/2 cup fresh cilantro leaves
- Sriracha sauce, to taste
Step 1: Cut meat from the rotisserie chicken, discarding the skin and bones; slice thinly.
Step 2: Spread mayonnaise on the rolls. Top each roll with chicken, cucumber, carrots and cilantro. Drizzle with Sriracha if desired.
