Hosts always appreciate guests who contribute a dish to the meal, but it can be challenging to find space to heat up items in the already overcrowded oven. Make it easier on your host and yourself by bringing something that can be served cold. This delicious apple cranberry salad is chock-full of amazing autumn ingredients and can be served chilled. Give it a try this year; it is sure to be a wonderful compliment to the main dish.

Serves 4-6

Ingredients:

6 cups baby spinach

1 red apple

1 green apple

2/3 cup walnuts, roughly chopped

1/3 cup roasted pumpkin seeds

1/2 cup crumbled feta cheese

1/2 cup dried cranberries

For the dressing:

1 tablespoon Dijon mustard
1¼ tablespoon maple syrup
2 teaspoons apple cider vinegar
1/4 cup olive oil
Salt and pepper, to taste

Step 1: Core the apples and slice very thin.

Step 2: Toss the baby spinach, apples, walnuts, roasted pumpkin seeds and feta together in a large bowl.

Step 3: Wisk the Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt and pepper together and toss with the salad when ready to serve.
