We all know breakfast is the most important meal of the day, but how many of us actually have time to prepare a meal every morning? Luckily for you, this easy recipe for no-bake peanut butter granola bars is the perfect make-ahead option that you can quickly grab on your way out of the house each morning.


  • 1 1/2 cups packed dates, pitted
  • 1/2 cup natural creamy peanut butter (salted is best)
  • 1/2 cup rolled oats (gluten free or regular)

Step 1: If your dates are not sticky and moist, soak them in warm water for 10 minutes, and then drain. Otherwise, proceed to step 2.

Step 2: Add dates to a food processor, and pulse until only small bits remain – they will likely clump into a ball, which is exactly what you want. If any big pieces remain, use a knife or spatula to push them down, then continue to pulse until they break down.

Step 3: Add peanut butter and oats, and pulse a few more times until fully incorporated, stirring and scraping with your knife or spatula as needed.

Step 4: Transfer to a parchment-lined 8” x 8” pan, and press down until flat. Slice into 8-10 individual bars, and store in the fridge or freezer to keep fresh.
