This delectable lemon chicken orzo soup recipe is the perfect alternative to the traditional chicken soups that you’re probably used to enjoying. Bursting with chicken, orzo, kale and a twist of lemon, this quick and easy recipe is guaranteed to warm your soul on a chilly day.
- 1 onion, chopped
- 1/2 cup carrots, shredded
- 12 cups chicken stock or broth
- 3 cups chicken, chopped
- 2 cups kale, ribs removed and leaves finely chopped
- 1 cup orzo
- 1/4 cup lemon juice
- 2 slices of lemon
- 1 tablespoon olive oil
Step 1: Sauté chopped onion in olive oil until translucent, about 2-3 minutes.
Step 2: Add carrots to onion and sauté another minute.
Step 3: Add stock or broth to onions and carrots and bring to a boil.
Step 4: Lower heat to medium, and add orzo.
Step 5: After 6 minutes, add chopped chicken and kale, cook for 1-2 minutes more.
Step 6: Remove from heat, stir in lemon juice and add lemon slices to soup. Discard lemon slices before storing leftover soup (if left in, the soup will get bitter).
