#DKMCrecipes: Texas Caviar
This addicting Tex-Mex dish goes by many different names such as Texas Caviar, Cowboy Caviar and Black Bean Corn Salsa, but regardless of the name, it’s simply delicious. This is a perfect dish to bring to summer potlucks, and if you haven’t tried it yet, you’re in for a real treat.
Servings: 8-10
Ingredients:
- 1 can corn, drained and rinsed
- 1 can black beans, drained and rinsed
- 3 tomatoes, diced
- 2 avocados, diced
- 1 cup chopped white onion
- ¾ cup chopped green onion
- 3/4 cup apple cider vinegar
- 3/4 cup olive oil
- Juice of 1 lime
- 1 cup sugar
Step 1: Drain and rinse the corn and black beans. Add to a large bowl.
Step 2: Chop the tomatoes, avocadoes and onions. Add to the black bean and corn mixture.
Step 3: In a small bowl, mix together the vinegar, olive oil, lime juice and sugar.
Step 4: Toss the liquid mixture in with the veggies.
Step 5: Cover and refrigerate at least one hour or overnight.
