Put those overripe bananas to use with this delicious chocolate chip banana muffins recipe! Great for a busy morning bite or an afternoon snack, these muffins are easy to make and freezer-friendly for storing large batches.
Servings: 12
Ingredients:
- 2 cups all-purpose flour
- 1 cup ripe bananas (the riper, the better)
- 1 cup milk
- 1/2 cup sugar
- 1/2 cup butter
- 2 eggs
- 1/2 cup chocolate chips
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Chocolate syrup, optional
Step 1: Preheat the oven to 350 degrees Fahrenheit.
Step 2: In a large bowl, mash the ripe bananas, and then add the butter, milk and eggs. Mix well.
Step 3: Add the flour, sugar, nutmeg and baking powder, stirring continuously.
Step 4: Fold the chocolate chips and vanilla into the batter.
Step 5: Place paper baking cups in a muffin tin, and fill each 2/3 full with the batter.
Step 6: Bake for 20-25 minutes. Test the muffins by inserting a toothpick into the center of one (nearest to the center of the muffin tin) and remove; if the toothpick comes out clean, they are fully cooked.
Step 7: Remove the muffins from the oven, and let them cool completely before drizzling with chocolate syrup (optional).
