Need a tasty side dish for your main course that kids and adults alike will love? These homemade sweet potato tots are a flavorful twist on the classic favorite.

Servings: 2-4

  • 1 large sweet potato, peeled
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 3 cups oil, for deep frying

Step 1: Bring a large pot of water to a boil. Add the whole sweet potato, and cook for about 15 minutes. The potato will need to be slightly softened but not easily mashed so it can be grated. Drain the water, and let the potato cool enough to handle, then grate with a cheese grater.

Step 2: Using a fork, combine the shredded potato and egg in a medium bowl. In a separate bowl, combine the flour, salt, paprika and garlic powder. Then, add the flour mixture to the sweet potato mixture, and stir to combine.

Step 3: Pour the oil into a deep fryer or a pot that’s deep enough for frying on the stovetop. Heat the oil to 375 degrees Fahrenheit or medium-high heat.

Step 4: Form the mixture into 1-inch balls, then add to the hot oil without overcrowding the pot. Please note, it will take you several batches to fry all of them. Fry for 3 minutes, then remove the balls with a slotted spoon, and allow them to drain on a plate lined with paper towels before sprinkling them lightly with sea salt. Repeat with the remaining potato mixture, allowing the oil to come back to temperature in between batches.
